I believe its just another urban Myth. Yes , in general, when everything are equal, a multi-coated lens do usually gives you higher contrast but then that also mean a more compressed highlight and shadow area. ( steeper tone curve ).
In field though, both deliver performing result, and there is really very few lens that can be said to be ( EVRYTHING EQUAL except the coating ) so its but just a moot I would say.
I had plenty of B&W shoot done with multi-coated lens that's just as great and similarly many color shot taken with uncoated or single coated lens that are just as great ...
