For your question, I would say..
1. Assume your studio is complete dark & the flash is the only light source inside your studio. There should not be any different no matter what sort of shutter speed you use. (of course not beyond the max. sync speed.)
2. If there is many other light source are in your studio rather then your flash, lower shutter speed will increase the absortion the light from other source.
For metering, it really depend on your light setting. Say if I using the setup like 2 side softbox one is full out put with another is 3/4 output, I will simply put the meter in the front of the model's face...
If you want to use large aperture, you should:
1. set the output of the light as min.
2. set the flash distance to model to more longer. (That why people need big soft box. However, most of the non-pro studio in HK are using the soft box with size appro. less then 1 meter is definetely not enough for portrait...I think at least is 1m x 1.5m will be much perfect for gal portrait..)
